At Black’s BBQ, we smoke our brisket for over 14 hours. Our sausage is made in-house from a fourth-generation recipe. We don’t cut corners, and we don’t cut ahead in line — barbecue is a patient process, and it’s worth every minute.

Step 1: What to Expect When You Arrive

Each Black’s BBQ location follows the same counter-service format. No reservations, no table assignments — just walk in, get in line, and build your tray.

The line will lead you through side dishes first, then to the meat counter. Take your time. Ask questions. Our staff is always happy to help first-timers navigate the process.

Many guests order family-style, selecting several meats and sides to share across the table. Others build their own tray, choosing a few favorite items for a personal feast. There’s no wrong way — just come hungry.

Step 2: Choosing Your Meats

Meat is sold by weight — typically by the half-pound or full pound — or by the piece. We slice everything fresh to order.

For your first time, we recommend starting with the classics:

Brisket

This is the heart of Texas BBQ. Choose between “moist” (more marbled and juicy) and “lean” (less fat, firmer texture). Both are smoked for over 14 hours.

Sausage

Made in-house. Options include:

  • Original
  • Garlic
  • Jalapeño Cheddar

Each link has a signature snap and rich flavor from the pit.

Ribs

Depending on location and availability:

  • Pork Spare Ribs – tender, meaty, and seasoned with our house rub
  • Giant Beef Ribs – a customer favorite for their rich, smoky flavor and impressive size
  • Baby Back Ribs – leaner, slightly sweeter, and easy to share

  • Barbecue Chicken (by the quarter, half, or whole)

First-timer tip: One pound of meat serves two adults on average. If you want to try several items, ask for quarter- or half-pound portions.

  • Sauce is served on the side. Try the meat first before adding anything. We’re proud of our house-made barbecue sauce, but the goal is to enhance the flavor, not cover it up.
  • Take your time. Barbecue is meant to be enjoyed slowly. Don’t rush.
  • Use your hands. For ribs and sausage, it’s perfectly acceptable. Napkins are on the table.
  • Refills and extras. Tea and soda refills are available, and we offer take-home containers if your eyes are bigger than your stomach.
