This summer, we took a little piece of Lockhart across the Atlantic. At The Big Grill Festival in Ireland, Kent and Barrett Black took the stage to teach pitmasters and barbecue fans how we approach pulled pork the Central Texas way — simple seasoning, honest smoke, and steady fire management.

For many in the crowd, it was their first time seeing how we adapt these techniques to a classic Weber kettle grill. Barrett walked through the same method he uses at home: a clean-burning fire, salt-and-pepper seasoning, and a preparation style that builds more bark and rich, smoky flavor.

The demo was all about showing how Central Texas barbecue isn’t tied to a single pit or location. With the right steps, you can create authentic pulled pork anywhere — even thousands of miles from Lockhart.
