When Central Texas BBQ met New York-style pizza, it created something Austin hadn't seen before. This past July, Black's BBQ partnered with Hoboken Pie to deliver the Heart of Texas — a limited-run pizza that brought smoked brisket to a whole new level.

Here's how this incredible BBQ brisket pizza came together and why it made a lasting impression.

 

BBQ + Pizza: The July Collab That Delivered

 

To celebrate summer in true Austin fashion, Black's BBQ teamed up with Hoboken Pie, a local favorite serving pizza since 2006. The mission? Craft a pizza that blended pit-smoked tradition with brick-oven magic.

The result was the Heart of Texas pizza.

Inside the Build: What Was on the Heart of Texas Pizza

Every ingredient was chosen to showcase flavor and technique:

Brisket Garlic Butter Base

A rich garlic butter infused with rendered brisket fat formed the flavorful foundation.

Hoboken's House Cheese Blend

A proprietary mix of mozzarella, parmesan, and specialty cheeses gave every slice its pull and melt.

Black's Signature Brisket

Generous layers of slow-smoked brisket stretched across the crust for full-bite flavor.

Norma Jean's BBQ Sauce

A swirl of the Black family's own sauce added sweet heat with a touch of nostalgia.

Fired in Hoboken's Original Oven

The brick oven, running nearly 500°F, gave the pie its golden crust and crisp finish — over a million pizzas have come out of that same oven since day one.

Topped with Jalapeño-Brined Onions

Bright, acidic onions pickled in jalapeño juice with herbs added a final kick after baking.

What Made This Specialty Pizza with Brisket Stand Out

This wasn't just BBQ on a pizza. It was a layered build that respected both traditions — smoky Central Texas barbecue and classic New York-style pie. Every detail, from the cheese blend to the brined onions, brought something unique.

And with Hoboken's well-worn, high-heat oven doing the cooking, the crust was just right: golden, crisp, and holding up to all that flavor.
