“It was a head-popping moment,” Matt said. “I’m like whoa. It’s so different than anything I’d ever had. That is the moment I fell in love with BBQ.”

Seasoned with nothing but salt and pepper, no sauce, no fuss—just smoke, bark, and beef. That single bite became the spark that launched one of the most influential names in barbecue.

Matt has since built a BBQ empire. He’s fed celebrities, competed on national shows, and grown Meat Church into a household name. But it all started here—over a beef rib at Black’s.
