Texas BBQ and Carolina BBQ are two of the most recognized styles in the country. Each follows its own path from pit to plate, built on generations of hands-on cooking and hard-earned know-how. In this blog, we’ll break down the difference between the two beloved styles of BBQ.

Texas BBQ

Like all great Texas barbecue, the work starts long before the fire’s lit. You trim the brisket with care to ensure it cooks evenly and the fat renders just right. Seasoning stays simple—just salt and pepper—so the beef and smoke can shine.

From there, it’s all about the cook. Briskets spend hours over wood (we favor post oak), slowly taking on smoke while the fat renders and the bark sets. Fire management matters, and so does having a good bit of patience. You cannot rush a good brisket.

Once the pork is tender, it’s chopped or pulled and paired with sauces that are native to the region. In Eastern North Carolina, vinegar and pepper sauces add sharpness and bite. Western North Carolina sauces include tomato for added depth. South Carolina is known for mustard-based sauces with a tangy, savory edge.

These sauces are often mixed directly into the meat, infusing flavor throughout rather than being put on top. That step brings balance to the richness of the pork. 

How Tradition Shapes the Plate

Even though the styles are different, they’re built on the same basics—low heat, long cook times, and keeping a close eye on the fire. The real differences come from what folks had on hand and how they learned to make the most of it.

Texas barbecue developed around cattle and wood-fired pits, with a focus on letting beef and smoke do the work. Carolina barbecue grew alongside pork and sauces designed to bring balance and depth to the finished meat.

Why These Styles Still Matter

Texas BBQ and Carolina BBQ matter because they carry forward two very different ways of building flavor. One leans on beef, smoke, and the pit to do the work. The other builds depth through pork, sauce, and regional seasoning passed down over generations.
