When Kent Black steps away from the pits in Lockhart, it's not for just any reason. He traveled to Ocean Springs, Mississippi, to serve as a guest judge at the National BBQ Association Conference, hosted by The Shed. It was a weekend filled with serious cooking, great people, and the kind of barbecue camaraderie you only find when the best of the best come together.

As always, Kent brought his decades of experience, his sharp eye for detail, and his respect for the craft to the table. Judging everything from steak to ribs and even a kids' cook-off, he was right at home among fellow pitmasters and chefs from around the country.

“I don’t know if there’s any better cookers in Mississippi—or Texas—than the folks right here at The Shed,” Kent said. “They brought their best.”

 

A Gathering of Pitmasters

The event wasn’t just about the food, though there was plenty of that. It was about tradition, pride, and the shared love of live-fire cooking. From classic ribeyes to inventive pinwheel steaks, competitors showed off their skills in a setting that balanced competition with real community.

Kent spent the day meeting other pitmasters, swapping stories, and soaking up the atmosphere. Whether it was the steak cook-off or the Bloody Mary contest (which Kent jokingly wished he’d judged), the energy was high and the hospitality unmatched.

“This whole place is full of love, great food, and barbecue,” he said. “It’s what we’re all about.”

Representing Texas the Right Way

At Black’s BBQ, the focus has always been on tradition and integrity. That’s what Kent brought with him to Mississippi — not just to judge, but to represent the roots of true Texas barbecue. Watching pitmasters from all over the country bring their A-game only reinforced what we already know: great barbecue speaks a universal language.
